Courgette with Olive Oil

Ingredients

  • 15 courgettes
  • 6 garlic cloves
  • 4 tbsp olive oil
  • 1 tsp dried mint
  • ½ tsp salt
  • ¼ tsp white pepper

Preparation

  1. Cut 2 mm off each side of the courgettes to leave only the flesh.
  2. Heat the oil in a pan and sauté the cloves.
  3. Add the chopped courgette and cook for 12-15 minutes.
  4. Add the dried mint, salt and pepper and cook for another minute.
  5. Serve cold with Lebanese bread.
