Carrot and Coriander Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 tsp ground coriander
  • 450 g carrots, peeled and sliced
  • 1¼ lt (5 cups) vegetable stock
  • 4 tbsp of fresh coriander, chopped
  • Salt and black pepper

Preparation

  1. Heat the oil in a large saucepan and sauté the onion until soft and translucent.
  2. Add the ground coriander, carrots and stock and bring to the boil. Reduce the heat, cover and cook for 20 minutes until the carrots are tender.
  3. With a hand blender, puree the soup until smooth.
  4. Season with salt and pepper and cook for 5 more minutes.
  5. Stir in the fresh coriander and serve.
