Lemon & Garlic Roast Chicken

Ingredients

  • 1 whole chicken (~1.2 kg)
  • 5 sprigs of thyme
  • 1 sprig of rosemary
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and black pepper
  • 1 lemon, halved
  • 2 lemons, cut into quarters
  • 3 garlic heads, halved crosswise

Preparation

  1. Preheat the oven to 200°C.
  2. Rinse the chicken with cold water inside and out then pat dry.
  3. Season with salt and pepper the chicken inside and out
  4. Stuff the cavity with thyme, rosemary, 2 halves of a lemon, and 2 halves of the garlic.
  5. Tie the chicken legs with a string
  6. Mix the olive oil, garlic and paprika in a small bowl and brush the chicken.
  7. Put the chicken into a roasting pan, scatter the lemons quarters and the rest of the garlic halves around the chicken.
  8. Roast for 1 hour. To test if the chicken is cooked, prick with a knife between the leg and the thigh, the juice should run clear.
  9. When the chicken is cooked, turn the oven off and leave the chicken resting for 10 min with the door slightly open.
