Artichoke with Olive Oil

Ingredients

  • 8 garlic cloves, thinly sliced
  • 2 onions, halved and thinly sliced 4 mm thin
  • 8 fresh artichoke hearts, sliced 4 mm thin
  • 1 green pepper, seeded and sliced
  • 1 red pepper, seeded and sliced
  • 100 ml ( cup + 1 tbsp) olive oil
  • Salt and white pepper
  • 1 tbsp fresh coriander, chopped
  • Plain yogurt to serve

Preparation

  1. Bring a large pot of water to the boil and cook the sliced artichoke hearts for a minute.
  2. Heat the olive oil in a separate pot over medium heat and sauté onion and garlic until soft.
  3. Stir in the artichoke hearts, cover and cook for 10 minutes over low heat.
  4. Taste and make sure the artichoke are fully cooked.
  5. Add the sliced peppers and cook for a minute.
  6. Season with salt and pepper to taste.
  7. Transfer to a serving dish and let it cool.
  8. Garnish with fresh coriander and serve with Lebanese bread and plain yogurt on the side.
