Mozzarella Sticks

Ingredients

  • 500 g mozzarella cheese
  • 4 eggs
  • 200 g (1⅓ cups) breadcrumbs
  • 100 g (¾ cup) flour
  • 1 tsp salt
  • ½ tsp pepper
  • Olive oil

Preparation

  1. Cut the mozzarella cheese into 1 X 10 cm sticks.
  2. In a plate, mix the flour with salt and pepper.
  3. Place the breadcrumbs in a separate plate.
  4. Lightly beat the eggs in a bowl.
  5. Dip the mozzarella sticks into the flour, shake to remove excess off then dip them into the eggs and coat with the breadcrumbs. Dip them again into the eggs and finally coat them a second time with the breadcrumbs.
  6. Cover the bottom of a frying pan with olive oil and heat over medium heat.
  7. Fry the mozzarella sticks in batches until nicely coloured and drain over kitchen paper.
  8. Serve hot. 

Tip: For extra flavour, add some 1 tbsp of dry basil or oregano to the flour.
